Turkey and Wild Rice Soup

Ingredients
1/2 C. - Wild Rice (I use a blend)
4 C. - Water
1/2 C. - Butter, Cubed
8 oz - Red Potatoes (About 2 medium) Diced
1 - Onion, Medium
1 Rib - Celery, Diced
1 - Medium Carrot, Diced
2 - Garlic Clove, Minced
1/2 C. - AP Flour
3 C. - Chicken Broth (I use bouillon and water)
2 C. - half and half cream (I use 1 cup milk, 1 cup Heavy cream)
1 Tsp - Salt
1/2 Tsp - Dried Rosemary, Crushed
2 C. - Cooked Turkey or chicken
Directions
In a sauce pan, Combine Rice and water
Bring to boil over med-high heat
Reduce heat, cover, simmer for 30 minutes
In a large sauce pan, heat butter over medium heat
Add potatoes, onion, celery, carrot and cook until almost tender. About 7 minutes
Add Garlic and cook for 1 more minute
Stir in flower until blended
Cook for 2 minutes
Gradually stir in broth and undrained rice
Bring to boil over medium heat
Cook and stir for 2 minutes until slightly thickened
Add Cream, salt, rosemary and return to boil
Reduce heat and simmer uncovered til rice is tender, about 20 minutes
Add Turkey or Chicken and stir till heated through
Serve it up!
