Turkey and Wild Rice Soup

Directions

  1. In a sauce pan, Combine Rice and water
  2. Bring to boil over med-high heat
  3. Reduce heat, cover, simmer for 30 minutes
  4. In a large sauce pan, heat butter over medium heat
  5. Add potatoes, onion, celery, carrot and cook until almost tender. About 7 minutes
  6. Add Garlic and cook for 1 more minute
  7. Stir in flower until blended
  8. Cook for 2 minutes
  9. Gradually stir in broth and undrained rice
  10. Bring to boil over medium heat
  11. Cook and stir for 2 minutes until slightly thickened
  12. Add Cream, salt, rosemary and return to boil
  13. Reduce heat and simmer uncovered til rice is tender, about 20 minutes
  14. Add Turkey or Chicken and stir till heated through
  15. Serve it up!
