  1. Preheat over to 400 Degrees F (Or smoker). 350 degrees if large Loin
  2. Rinse and pat dry Tenderloins
  3. Pierce the Tenderloins with a fork all over. Really poke it good
  4. Rub oil all over the Tenderloins
  5. Cover Tenderloins with Rub and pat into surface
  6. Place meat into 13" x 9" baking dish
  7. Drizzle the citrus juice over the Tenderloins
  8. Add a splash of water to the bottom of the dish so it just covers the bottom to help with burning
  9. Bake for 25-35 minutes until the internal temp is what you like. We are 140 Degrees F family. It will be slightly pink
  10. Let the meat rest for at least 10 minutes
  11. Slice and drizzle pan juice over tenderloin slices
  12. If using a larger loin. Bake at 350 until 120 internal. Will take about an hour. Just keep checking it with probe. Once it hits 120 Degrees F internal, turn the oven up to 425 to crisp the outside and cook till desired internal temp.
