Chicken Tikka Masala

Ingredients
2 Tbls Olive Oil
1 Finely chopped onion
4 Cloves of garlic, Minced
1 Tbls Ground Cumin
1 Tsp Salt
1 Tsp Ground Ginger
1 Tsp Cayenne Pepper (I don't use it)
1/4 Tsp Ground Cinnamon
1/4 Tsp Ground Turmeric
1 Can Tomato Sauce (14oz)
1 Cup Heavy Whipping Cream
2 Tsp Paprika
1 Tbls White Sugar
1 Tbls Vegetable Oil
4 Skinless Boneless Chicken Breast Halves, Cut into bite size pieces
3/4 Tsp Curry Powder
1/2 Tsp Garam Marsala
Directions
Heat Oil in a Sauce Pan over medium heat
Add onions and cook till Translucent (~5 minutes)
Stir in Garlic and cook just until fragrant (~1 minute)
Stir in Cumin, Salt, Ginger, Cayenne, Cinnamon, Turmeric, fry until fragrant (~2 minutes)
Stir Tomato Sauce into the onion/spice mixure and bring to a boil
Reduce Heat and simmer sauce for 10 minutes.
Mix in Heavy cream, Paprika, and Sugar. Bring back to a simmer and cook until thickened (~10-15 minutes)
Heat Vegetable Oil in a large skillet over medium heat
Stir in chicken and sprinkle with Curry Powder and Garam Marsala.
Sear Chicken until lightly browned and still pink inside (~3 minutes)
Add sauce to the pan and simmer chicken until no longer pink in the middle.
Serve over Jasmine Rice and a vegi. Sooooo Gooood.
