Sofrito Chicken

Ingredients
2 Roma Tomatoes (Quartered) or 10 Cherry Tomatoes
2 Bell Peppers, Seeded and Quartered (We like 1 Red, 1 Orange)
1 Cubanelle Pepper, Seeded and Quartered
1 Small Onion, Peeled and Quartered
1 Bulb Garlic, Peeled
1/2 C. to 1 C. Chopped Fresh Cilantro (I use less because I don't like Cilantro)
2 Tbls Olive Oil
8-12 Boneless, Skinless Chicken Thighs (Only 9 Fit in my pan 12")
2 Tsp Adobo Seasoning
2 Tsp Cumin
1 Cup Chicken Broth (I'm lazy and use Hot water and Bouillon)
Directions
Sofrito Sauce: Add Tomatoes, Bell Peppers, Cubanelle Pepper, Onion, Garlic and Cilantro to the Food processor
Pulse until Finely Chopped. Should make 3 cups of Sofrito. Reserve 1 Cup for this recipe and freeze the rest.
Heat Olive oil in large pan over medium heat.
Season Chicken with the adobo and cumin. Add to hot skillet and sear each side until golden brown. 5-6 minutes per side
Reduce heat, add chicken broth and 1 cup sofrito.
Cover and simmer until chicken thighs fall apart. Turning every few minutes (20-30 minutes)
