Zucchini Mini Muffins

Ingredients

• 6 oz (about 1 1/3 C.) - All Purpose Flour
• 1/2 C. - Packed Brown Sugar
• 1 Tsp - Baking Powder
• 1 Tsp - Cinnamon
• 1/2 Tsp - Salt
• 1/4 Tsp - Ground Allspice
• 2/3 C. - Shredded Zucchini (about 1 medium Zucchini)
• 3 Tbls - Canola Oil
• 2 Tbls - Butter, Melted
• 2 Tbls - Milk
• 1 Tsp - Vanilla
• 1 - Large Egg, lightly beaten
• cooking spray

Directions

1. Preheat oven to 400 Degrees F
2. In a large bowl combine flour, brown sugar, baking powder, cinnamon, salt and allspice.
3. In a medium bowl combine zucchini, canola oil, butter, milk, vanilla, and egg
4. Add zucchini mixture to the flour mixture and mix till just moistened
5. Spray cooking spray on 24 mini muffin cups
6. fill 24 mini muffin cups with batter
7. Bake for 10 minutes or until toothpick is clean when inserted into center. (~18 minutes as bars in 9" x 13" dish)
