Chicken & Zucchini Poppers

Ingredients

Directions

  1. Toss the chicken, zucchini, green onion, cilantro, garlic, salt, pepper and cumin. (Will be quite wet)

Stove Top Cooking

  1. Heat a drizzle of oil in a medium pan on medium heat
  2. Use a small scoop or a heaped tablespoon to scoop meatballs into pan
  3. Cook 8-10 at a time for about 5-6 on first side
  4. Flip and cook another 4-5 minutes or until golden brown and cooked through (165 degrees F)

Baking Instructions

  1. Drizzle oil onto baking sheet
  2. Use a small scoop or a heaped tablespoon to scoop meatballs onto greased pan
  3. Drizzle a bit of additional oil over meatballs
  4. Bake at 400 degrees F for 20-25 minutes or until cooked through (165 Degrees F)
  5. Use broiler for a couple minutes to crisp up
  6. Server with favorite dips (Hummas, Guac, Salsa or Ranch)
