Knoephla Soup

Ingredients

·        Soup

o   3-4 Potatoes, Chopped

o   2 Celery Stalks, Chopped

o   1 Onion, Chopped

o   3 Tbls Chicken Base

o   Water

o   4 Cups Heavy Cream

o   8 Tbsp Butter

·        Dough

o   2 C. Flour

o   2 Eggs

o   1 Tbsp Baking Powder

o   ½ C. Warm Water

o   Salt and Pepper to taste

Directions

·        Soup

1.   Fill Kettle about ½ way with water and bring to boil

2.   Add Vegetables and potatoes

3.   Add Chicken Base

4.   Cook until Vegetables are tender

5.   Reduce heat to simmer

6.   Add Dough (see below)

7.   Simmer till dough is cooked

8.   Reduce Heat

9.   Add Butter and Cream and mix well

10.               Cook until heated through

·        Dough

1.   Sift Flour, Baking powder, salt and pepper into a bowl

2.   Form well in flour

3.   Crack eggs into well and mix with a fork

4.   Add Water slowly, mix well

5.   Cover dough with towel until soft

6.   Roll out and cut with pizza cutter and add to soup ½ in strips
